Serves 5
Ingredients
2½ cups shredded cooked chicken
1 large celery stalk, chopped
½ green apple, diced
½ cup toasted walnuts
2 tablespoons chopped fresh parsley
2 spring onions, finely sliced
1 large handful of rocket
mayonnaise, as required
juice of 1 lime
a pinch of salt
freshly ground black pepper
Method
Combine all ingredients until evenly mixed and keep in the fridge until
you are ready to serve.
