Chicken and Bacon Balls with Hidden Vegetables

INGREDIENTS 

1 Bacon, diced
500gm Chicken Mince
1 Onion, peeled
2 Medium Carrots, peeled and sliced
1 Medium Zucchini, sliced (you can peel if your little to disguise it even more)
1 Tbs Minced Garlic
Salt and Pepper to Taste
Dipping sauces to serve
Plain flour for coating

LETS PUT IT ALL TOGETHER

1. Using a food processor, a thermo mixer or a grater, process the onion, carrot and zucchini until broken down. IMG_1007

2. Place the streaky bacon into a frypan and cook until lightly browned and the flavour is released. Add to the vegetable mix and process for 10 second

3. Add the chicken mince, minced garlic and salt and pepper.  Process on low speed to just combine the mince with the other ingredients.  Be careful not to over process it. Alternatively, if not using a food processor use your hands to mix through. IMG_1010

4. Pour some flour onto a plate and then take tablespoon size amounts of the mix and roll with flour on your hands to form a ball shape.  Place into a greased baking dish.  Repeat until all the mix is done.  Spray the balls with cooking sprays and then bake in a 200 degree celcius oven for 20 minutes or until lightly golden and they bounce back when touched.IMG_1018

Makes 30+

Freezer friendly: after cooking allow to cool and then place into zip lock bags and freeze for up to 3 months.  When ready to eat place on a lined baking tray while still frozen and reheat in the oven – 180 degree celcius for 15 minutes or until heated through.
