Leftover Turkey Taco Soup

PREP TIME: 5 mins / COOK TIME: 15 mins / TOTAL TIME: 20 mins / Serves: 10 servings
 
INGREDIENTS
    • 1 tablespoon olive oil
    • 1 onion, chopped
    • ½ teaspoon salt
    • 2 cans diced green chilies, drained
    • 3 cloves garlic, finely chopped
    • 1 teaspoon chili powder
    • 1 tablespoon cumin
    • ½ teaspoon oregano
    • ¼ teaspoon cayenne pepper
    • 500ML chicken stock
    • 1 can  tomatoes with green chilies
    • 3 cups chopped and cooked turkey breast
    • 1 ½ cups corn (frozen is fine)
    • 1 can kidney beans, rinsed and drained
    • 2 limes
INSTRUCTIONS
  1. Heat the oil in a large pot over medium heat. Once heated, add the onions and salt and sauté for 2-3 minutes.
  2. Add in the green chilies, garlic, chili powder, cumin, oregano, and cayenne pepper. Stir until combined. Cook for 1 minute.
  3. Add in the stock and tomatoes with green chilies. Bring to a boil. Then turn down to a simmer.
  4. Add in the turkey, corn, and beans. Simmer for 5 minutes.
  5. Squeeze in the juice of 2 limes.
